All right you guys, I’m having a bit of a moment with skyr. Ever heard of it? It’s Icelandic-style yogurt, very similar to strained (Greek) yogurt in texture, taste, and nutritional value. Now, I’m not about to try to convince you to quit Greek yogurt cold turkey and convert to skyr, because honestly, they’re both excellent choices in terms of nutritional value (high protein, low sugar, simple ingredients). What I hope to do is expose you to yet another healthy option in your yogurt repertoire. Trying something new every once in a while is good for ya 😉 In terms of the skyr parfaits, though, don’t worry if you don’t have access to skyr in your local grocery stores. Greek yogurt will work beautifully!
So, skyr. I learned about skyr from a coworker about a year ago, and I decided to go out and try some myself. The brand she turned me on to is Siggi’s, and I love it to this day; however, I’m sure there are other wonderful brands out there that I have yet to try. Remember what I always say about choosing brands — carefully consider the list of ingredients more than anything else. If you see additives and artificial sweeteners, avoid that brand like the plague. But if the ingredients are clean, go for it!
In light of the red-white-and-blue-ness of this recipe, what are your Fourth of July plans?? I’m going up to my family’s cabin with my parents, and hopefully my brother and his family will join too. It’ll be about a 4 hour drive for me, so not too bad, though I do get a little impatient when I’ve listened to all the CDs I can possibly listen and know every word to every song, and there’s still somehow 3 hours left. It’s a classic case of Are we there yet??, except I have no one to say it to when I drive up alone. That’s when I sometimes just call everyone I know and hope someone answers. Maybe I should get some books on tape? I don’t know, I’m just not convinced that would entertain me. I like to jam, aka belt it in my car, so music is always a solid option… I actually had this idea of going to the libary and checking out all of the Now That’s What I Call Music CDs that came out in the 90s, so that I could see which songs remind me of which moments in my childhood. That seems like a good idea, right?? I think so 😉
I have to tell you, one summer we had my dad’s entire side of the family up to the cabin for the Fourth, and, knowing that the boy cousins would be sleeping outside in a tent, my cousin Jackie and I started scheming almost immediately upon her arrival. We took all of the fake minnows out of my dad’s tackle box, got them wet so they’d feel nice and slimy (and real), and scattered them all over the tent and inside the sleeping bags. It did trick the boys into thinking they were real minnows, but that led them to telling on us, which led us to be like, “OMG THEY WERE FAKE COOL YOUR JETS.”
…We may or may not have also strung fishing line across the tent so that all entrants would walk into it. This is what growing up with The Parent Trap (the one with Lindsay Lohan) does to you. Plus… I really am proud of that minnow prank.
Anyway, this Fourth of July will be filled with all the woodsy cabin-y stuff, like fishing, canoeing, sitting around campfires, and backgammon. Well, backgammon isn’t particularly woodsy, but we just play a lot of it when we go up to our cabin. Wherever you are for the Fourth, I hope you enjoy it, along with all of the red, white and blue recipes out there. Maybe even these skyr parfaits, because they’re so simple and festive. You only need a handful of ingredients, and you might already even have some/all of them! Then just throw your leftover blueberries in this Peach Blueberry Salad or your strawberries in these Strawberry Coconut French Toast Bakes. Ya won’t regret it 😉 Happy Fourth!
Red White and Blue Skyr Parfaits
Simple yogurt parfaits using skyr (or Greek yogurt), blueberries, strawberries, and healthy toppings.

- Method: Combine
- 1 cup plain skyr (I used Siggi’s), or plain Greek yogurt
- 1 tsp vanilla extract
- 2 tsp maple syrup
- 1/4 cup bluberries
- 1/4 cup strawberries
- Optional toppings: coconut, cacao nibs, chia seeds, nuts & seeds
- In a bowl, thoroughly mix the yogurt, vanilla extract, and maple syrup.
- Top with blueberries, strawberries, and as many optional toppings as you want.
- Optional: Create layers by layering half the yogurt in a jar or bowl, half the berries and toppings, and then repeating these layers once more.
* You could also purchase naturally flavored vanilla skyr or Greek yogurt.
