Dark Chocolate Cherry Jam Bars

Dark chocolate cherry jam bars are a healthy Valentine's Day treat you can share with friends and loved ones! This recipe makes a small batch that can easily be doubled. ~Oats, sunflower seeds, cocoa powder, cherry jam~

Ingredients

  • 1/2 cup sunflower seeds
  • 1 1/2 cups old-fashioned oats
  • 1/2 cup cocoa powder
  • 1/4 tsp sea salt
  • 4 tbsp coconut oil
  • 1 tbsp almond butter
  • 4 tbsp honey
  • 2 medjool dates
  • 3/4 cup cherry jam*
  • optional: semi-sweet chocolate chips for topping

Instructions

  1. Preheat oven to 350 degrees and line a loaf pan with parchment paper.
  2. Combine sunflower seeds, oats, cocoa powder, and sea salt in a food processor. Pulse until you have a coarse flour.
  3. In a saucepan, melt coconut oil. Add almond butter and honey and whisk together.
  4. Pour saucepan mixture into food processor with dates, and process until combined (about 20 seconds). Make sure there are no dry pockets -- the mixture should be wet and might seem pretty oily.
  5. Press about 3/4 of the crust mixture into prepared pan and poke with a fork in a few places to allow any air to release while baking. Bake at 350 for ten minutes.
  6. Remove crust from oven and allow to cool for a minute or two. Spread cherry jam in an even layer over the crust. Sprinkle remaining oat crumble mixture over the top of the jam. Bake for another 14-16 minutes at 350.
  7. Remove from oven and allow to cool before carefully lifting out of pan and cutting into squares. Optional (but not): Sprinkle a few dark or semi-sweet chocolate chips on the top while the bars are still warm.

Notes

*Raspberry or strawberry jam would be just as delicious! Make sure your jam is free of artificial ingredients.
