Very Cherry Vinaigrette

Description

This simple cherry vinaigrette comes together with just four ingredients! Use on all your favorite salads, especially in summer with all the fresh greens, as well as hearty grain salads.


Ingredients

  • 1 heaping cup fresh cherries, pitted and stems removed
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons light vinegar (such as sherry or white balsamic)
  • 1/4 teaspoon salt (+ more to taste)
  • Optional: 1 tablespoon agave or maple syrup


Instructions

  1. Blend. Place pitted cherries, olive oil, vinegar, and salt in a blender or food processor. Blend until smooth, about 30-60 seconds.
  2. Taste & adjust. Taste the cherry vinaigrette and add more salt if desired. If it is not sweet enough, add about a tablespoon of your favorite all-natural sweetener (such as agave, maple syrup, honey, or unrefined cane sugar). Serve on your favorite salad!

Notes

  1. Sweetener - To keep this cherry vinaigrette vegan, avoid using honey as your sweetener. Maple syrup, agave, and unrefined cane sugar are my go-to sweeteners for vinaigrettes.
