Filling Ingredients:
- 5-6 cups Granny Smith or Honeycrisp apples, sliced
- 1/4 cup maple syrup
- 2 teaspoons cinnamon
- 2 tablespoons tapioca starch or arrowroot
- Juice from 1/2 fresh lemon
Topping Ingredients:
- 1 cup spelt flour
- 1 stick butter
- 1/4 cup almond butter
- 1/3 cup brown sugar
- 2 tablespoons maple syrup
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 cup whole rolled oats
Instructions
- Prep. Preheat your oven to 350 degrees and butter a 9x13-inch baking dish.
- Making filling. Place apple slices in a large bowl and add maple syrup, lemon juice, tapioca or arrowroot starch, and cinnamon. Toss gently to coat the apple slices, then transfer the mixture to the baking dish and spread apples into an even layer.
- Make topping. In a food processor, combine butter, spelt flour, almond butter, maple syrup, brown sugar, salt, and cinnamon. Pulse until just combined, then add oats and pulse just enough to incorporate them without breaking them down too much.
- Top & bake. Pour the topping over the prepared apples, evenly distributing over the top. Bake at 350 for 45 minutes, then allow to cool for 15 minutes before serving warm with a scoop of vanilla ice cream or whipped cream. Yum!
