These nourishing apple pie yogurt bowls are perfect for starting your days with a protein-packed, healthy breakfast! With sautéed apples that taste like apple pie filling, these yogurt bowls taste festive and make the most of those fall and winter apples.

- 1-2 teaspoons coconut oil
- Juice from 1/2 fresh lemon
- 2 tablespoons maple syrup
- 1/8 teaspoon fine salt
- 1/2 teaspoon cinnamon (or apple pie spice) + another dash for yogurt
- 2 fresh apples, diced (Honeycrisp apples are our fave!)
- 2 cups plain Greek yogurt (2% or whole milk recommended)
- 1/2 teaspoon pure vanilla extract
- 1/2 cup granola
Instructions
- Sauté apples. Heat coconut oil in a skillet over medium heat. Add diced apples to a bowl with 1.5 tablespoons of maple syrup (reserve the other 1/2 tablespoon for yogurt), lemon juice, salt, and cinnamon. Toss to coat, then transfer apples to the skillet and reduce heat slightly (low-medium). Sauté apples until soft and fragrant, stirring occasionally, about 5-7 minutes. Transfer them to a separate dish and pop in the fridge to cool more quickly while you flavor the yogurt.
- Make yogurt. Measure out yogurt into a large bowl. Add the remaining 1/2 tablespoon of maple syrup, vanilla extract, and a dash of cinnamon. Whip ingredients together with a spoon until thoroughly combined.
- Assemble. Divide yogurt into two dishes. Ensuring apples are cooled enough, top the bowls of yogurt, followed by desired amount granola and/or other toppings in each bowl. Enjoy!
Notes
- Apples. When cooking apples, I recommend using a sweet-tart or tart variety as the flavor really pops against the sweetness of maple syrup and cinnamon. My favorite varieties to use here are Honeycrisp, Cortland, Pink Lady, or Granny Smith.
- Make ahead instructions. To make this recipe in advance, follow steps 1 & 2 and store in the fridge in separate airtight containers. When you're ready to eat, get out your ingredients and assemble!
