Description
Cherry lime overnight oats is a simple and tasty make-ahead breakfast recipe with oats, yogurt, sweet cherries, and lime. Celebrate cherry season, keep your kitchen cool, and save time in the morning!
Ingredients
- 1 cup rolled oats
- 1/2 tbsp chia seeds
- 1 cup milk (I love plant-based milk!)
- 1/3 cup plain Greek yogurt
- 1 tsp vanilla
- juice + zest of 1 lime
- 1/2 tbsp honey
- 1 cup pitted sweet cherries, halved
Instructions
- In a large mason jar or bowl, combine all ingredients except cherries.
- Shake well to incorporate.
- Allow mixture to sit in fridge overnight. In the morning, divide into two servings. Top each with 1/2 cup cherries (or more!)
Notes
*If you want, add cherries in the night before. Cherries tend to hold their shape pretty well, so they won't get mushy like some other, more delicate fruits/berries. Or, do both -- add them in the night before, and add more the next day.
*In winter, thawed from frozen pitted cherries would work well as a substitute! But in summer, if you have access to them -- go fresh, all the way.
