Description
This homemade guacamole recipe is seriously crazy good, loaded with fresh avocado, cherry tomato, red onion, cilantro, lime, feta or cotija cheese, and pepitas. Get your tortilla chips ready!

- 2 large avocados
- juice from half of a fresh lime
- 1/4 cup red onion, very finely diced
- 1/4 cup cherry tomatoes, cut into quarters
- 1/4 cup fresh cilantro, finely chopped
- 1/4 cup feta or cotija cheese, crumbled (+ more for topping)
- 1/4 cup pepitas (+ more for topping)
- Salt & freshly cracked pepper
Instructions
- In a medium bowl, combine avocado flesh, salt, and lime juice. Mash it all together, leaving some parts of the avocado chunky.
- Add in remaining ingredients and carefully fold them in without mashing too much more (to maintain the slightly chunky texture). Taste for salt and lime, and add more if needed. Top with more cheese, pepitas, and cilantro before serving.
- Serve with your favorite tortilla chips, raw veggies, eggs, on sandwiches or wraps, scooped onto salads, or avocado toast. YUM!
