Avocado Toast with Everything Bagel Seasoning

Description

Avocado toast with everything bagel seasoning is a simple, savory snack, breakfast, or lunch! A thick layer of avocado mash, plump cherry tomatoes, 


Ingredients

Scale
  • 1 slice sourdough or whole grain bread
  • 1/2 avocado, pit removed
  • 4-5 cherry tomatoes, diced
  • 1 teaspoon everything bagel seasoning
  • 1 tablespoon hemp seeds
  • 1 teaspoon pepitas
  • optional: a pinch of salt if desired


Instructions

  1. Mash avocado. Scoop out the avocado flesh onto a cutting board. Using a fork, mash the avocado to desired consistency - I like some slight chunks, but mostly mashed. Fold the diced tomatoes into the avocado mash directly on the cutting board.
  2. Toast bread. Place your bread in the toaster and toast until it's browned evenly and nicely crisped, without being too soft or burned.
  3. Top, season, and serve toast. Transfer the avocado mash to the toast and season with everything bagel seasoning, pepitas, and hemp seeds. If desired, add another pinch of salt (maybe try it first to make sure). Enjoy immediately!

Notes

  1. Toasting while mashing. You could mash your avocado while your toast is in the toast, but I usually do these steps separately. Mashing avocado first gets it ready to go as soon as the toast is out of the toaster, and then I'm eating a warm piece of toast versus one that potentially had to sit and cool down. It also helps me not forget about my toast and burn it, so if you're prone to burning your toast... this helps avoid it!
  2. Mash separately. I always mash my avocado separately instead of directly on the toast, as this helps keep the toast in tact.
  3. Toppings. You can of course go beyond the toppings we have here! Top with eggs, olive oil, feta, chickpeas, chili crunch... all of these would be delicious with this toast.
