- Sourdough bread - We have some really incredible local bakeries that sell our favorite sourdough bread, but feel free to use what you have access to! If you're at the grocery store, I recommend finding a heartier, seedy whole grain bread.
- Avocado - And might I add, one at peak ripeness! This means this avocado should be dark green, and when you gently press your thumb into the avocado, it gives slightly beneath the pressure. I actually always put my avocados in the fridge at this point if I'm not using them right away, because it slows the ripening process and keeps them at their prime ripeness for longer.
- Tomatoes
- Everything Bagel Seasoning - As this seasoning already contains salt, I typically don't add more salt to this recipe. However, feel free to add a pinch of salt if desired.
- Hemp seeds
- Pepitas
Substitutions & Variations
Avocado toast variations make for a fun conversation, and to tell you the truth I'd love to write a whole post on it. For today, let's just walk through a few!
- Gluten Free - For a gluten free version, make sure to use your favorite gluten free bread! If possible, I still recommend trying to get a thicker slice for that sink-your-teeth-into-it experience.
- Avocado toast with egg - So classic and so perfect. Basically what I eat for breakfast every day! Simply top your avocado toast with your egg of choice. It could be a fried egg, hard-boiled (I usually use my Ninja Foodi for boiling eggs), jammy, poached, or even my soft scrambled eggs with fresh chili peppers for a little heat.
- Avocado toast with chickpeas - Add some chickpeas with a drizzle of olive oil, feta, salt, and fresh herbs of choice (chives, parsley, and cilantro are all delicious, but you honestly can't go wrong here).
- Caprese avocado toast - Top your toast with fresh tomatoes (better yet - layer on some garlic oven-roasted tomatoes), sliced mozzarella balls, drizzle with aged balsamic, and sprinkle with salt.
- Honey sunflower avocado toast - Top your avocado mash with salted sunflower seeds and a drizzle of honey! Add a pinch of salt if the sunflower seeds don't taste salty enough.
How to Make This Avocado Toast
- Step 1: Slice your avocado in half lengthwise and twist the halves in opposite directions to open. Scoop out the avocado from one half (without the pit) onto a cutting board. Mash with a fork, leaving it slightly chunky if desired. Fold the diced tomatoes into the mash right on the cutting board.
- Step 2: Meanwhile, toast your bread well enough to be slightly browned and crispy all throughout (not burned, not soft). Transfer the avocado mash to your well-toasted bread.
- Step 3: Time to season! Sprinkle with Everything Bagel Seasoning, hemp seeds, and pepitas. Serve immediately as avocado browns when exposed to air.
Tips for Making the BEST Avocado Toast
After many years of making avocado toast, I've developed some tips that make it extra good:
- Mash the avocado separately from your toast. I love to mash my avocado and any mix-ins right on my bamboo cutting board and then transfer to the piece of toast. That way, you avoid puncturing your toast or squishing it down. Remember, we want to keep it thick!
- Pick avocados in their prime. Overripe avocados taste super funky, so we don't even want to go there. To see if your avocado is perfectly ripe, it should be dark green in color, and avocado should give slightly when you press into it gently with your thumb. To slow ripening or keep perfectly ripe avocados longer, transfer them to your fridge. If you have a rock hard avocado, that means it's underripe and needs to sit out on your counter for longer. This stand true for homemade guacamole as well!
- Pick good bread and toast it well. Your bread choice can make all the difference between a memorable piece of toast and one that was just okay. I usually buy locally made sourdough or breads that are fresh and widely available where I live (shout out and love to Madison Sourdough), but when I get bread from Target or the grocery store, I'll look for something hearty with whole grains. Additionally, you want the toast to be sturdy and crunchy, so toast the softness away without burning it. You know your toaster best, but for me this means I have to put it down twice and flip it the second time. Honestly I think we need a new toaster, but for now, we live with its quirks 🙂

Instructions
- Mash avocado. Scoop out the avocado flesh onto a cutting board. Using a fork, mash the avocado to desired consistency - I like some slight chunks, but mostly mashed. Fold the diced tomatoes into the avocado mash directly on the cutting board.
- Toast bread. Place your bread in the toaster and toast until it's browned evenly and nicely crisped, without being too soft or burned.
- Top, season, and serve toast. Transfer the avocado mash to the toast and season with everything bagel seasoning, pepitas, and hemp seeds. If desired, add another pinch of salt (maybe try it first to make sure). Enjoy immediately!
Notes
- Toasting while mashing. You could mash your avocado while your toast is in the toast, but I usually do these steps separately. Mashing avocado first gets it ready to go as soon as the toast is out of the toaster, and then I'm eating a warm piece of toast versus one that potentially had to sit and cool down. It also helps me not forget about my toast and burn it, so if you're prone to burning your toast... this helps avoid it!
- Mash separately. I always mash my avocado separately instead of directly on the toast, as this helps keep the toast in tact.
- Toppings. You can of course go beyond the toppings we have here! Top with eggs, olive oil, feta, chickpeas, chili crunch... all of these would be delicious with this toast.
