Ingredients
Units
Scale
- 2 cups watermelon, scooped out with a melon baller
- 1 cup blueberries
- 1 cups strawberries, hulled and quartered
- 2 tablespoons honey
- juice of 1 lime (at least 2 tbsp)
- 1/2 cup loosely packed fresh mint leaves, roughly chopped into small pieces
Instructions
- Combine fruit. In a large bowl, combine watermelon, blueberries, and strawberries.
- Make honey lime sauce. In a separate small bowl, whisk together honey and lime until smooth and combined.
- Dress fruit salad. Pour honey lime mixture mixture onto fruit and toss well. Garnish with lots of fresh mint, and serve!
Notes
- Storage instructions. Store leftover fruit salad in an airtight container in the fridge for up to 3 days. The lime starts to break down the fruit the longer it sits, so the texture can get a little weird. Best to enjoy quickly or add the honey lime dressing just before eating.
- Watermelon shapes. I love using a melon baller for this recipe because it's similarly shaped to the blueberries, but it's not absolutely necessary. Cutting into cubes would be just fine as well!
