These peach pie overnight oats are a delicious way to enjoy one of summer's best fruits! Overnight oats are a healthy, hearty, delicious meal you can make ahead to save time on busy mornings.

Ingredients

  • 1/2 cup whole rolled oats
  • 1/2 tablespoon chia seeds
  • 1/8 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup milk
  • 1/3 cup Greek yogurt
  • 1/2 tablespoon maple syrup
  • 1/2 cup fresh peaches, diced
  • 1 tablespoon almonds, pecans, or walnuts

Instructions

  1. Combine. Combine all ingredients except for peaches and nuts into a 16-ounce mason jar or bowl. Either cover and shake to combine, or stir.
  2. Soak. Cover the oat mixture and soak overnight, or for at least 30 minutes.
  3. Serve. When you're ready to eat the overnight oats, top with diced peaches and nuts. Enjoy!

Notes

  1. Ingredient amounts: The ratio of oats and chia seeds to liquid is pretty important, but as for spices and add-ins, feel free to adjust to taste. In other words, if you want more nuts or peaches, go for it!
  2. Total Time: The total time to make this recipe includes 5 minutes of hands-on prep, and then at least 3 hours of soaking in the fridge to get nice and thick. They will get slightly thicker after 3 hours, but if you don't want to wait until the next day... try them at 3 hours and see how you like them.
