These peach pie overnight oats are a delicious way to enjoy one of summer's best fruits! Overnight oats are a healthy, hearty, delicious meal you can make ahead to save time on busy mornings.

- 1/2 cup whole rolled oats
- 1/2 tablespoon chia seeds
- 1/8 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/2 cup milk
- 1/3 cup Greek yogurt
- 1/2 tablespoon maple syrup
- 1/2 cup fresh peaches, diced
- 1 tablespoon almonds, pecans, or walnuts
Instructions
- Combine. Combine all ingredients except for peaches and nuts into a 16-ounce mason jar or bowl. Stir everything together to combine.
- Soak. Cover the oat mixture and soak overnight, or for at least 4 hours.
- Serve. When you're ready to eat the overnight oats, top with diced peaches and nuts. Enjoy!
Notes
- Ingredient amounts: The ratio of oats and chia seeds to liquid is pretty important, but as for spices and add-ins, feel free to adjust to taste. In other words, if you want more nuts or peaches, go for it!
- Total Time: The total time to make this recipe includes 5 minutes of hands-on prep, and then at least 4 hours of soaking in the fridge to get nice and thick. They will continue to thicken after the 4-hour mark, but if you don't want to wait until the next day... try them at 4 hours and see how you like them.
