Watermelon ginger agua fresca is a refreshing and delicious summer beverage with watermelon, ginger, lime, and mint. It's naturally sweetened with agave and is a great way to beat the summer heat!

Ingredients

Units Scale
  • 4 cups watermelon, cut into chunks
  • juice from 2 juicy limes
  • 1-inch piece of fresh ginger root, peeled
  • 5-6 mint leaves
  • 1-2 tablespoons agave (adjust to taste)
  • 2 cups filtered water
  • 1/4 teaspoon salt

Instructions

  1. Blend. Combine all ingredients in a blender, and blend until smooth. Taste and adjust flavors if desired (more agave, lime, salt, etc.). Chill in refrigerator for at least 30 minutes, and serve over ice. Garnish with fresh mint leaves.

Notes

  1. Optional strain. I find that the fresh ginger and mint get blended small enough that I don't mind, but if desired, you can also pour the agua fresca through a fine mesh sieve to strain out some of the small bits of ginger or mint leaves.
  2. Juicing limes. I highly recommend a lemon squeezer (or in this case, a lime squeezer!) to get the most juice out of each lime.
  3. Watermelon-to-water ratio. I like more watermelon than water when making agua fresca, but feel free to taste and adjust. If you like it more watery, add more water; if you like it less watery, add less water.
