Roasted Red Pepper Pizza Sauce

Description

This roasted red pepper pizza sauce is packed with bold flavor from fire-roasted tomatoes and roasted red peppers and aromatic garlic and herbs. It’s the perfect homemade alternative to store-bought sauces. Use it on pizzas, as a dip, or in pasta dishes!


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 small sweet onion, peeled and diced
  • 3 cloves of fresh garlic, minced
  • 6 tablespoons tomato paste
  • 1 tablespoon fresh oregano (or 2 teaspoons dried)
  • 1/2 teaspoon salt (taste and add more if needed)
  • 1/4 teaspoon black pepper
  • 1 12-ounce jar roasted red peppers, drained
  • 1 14-ounce can diced fire-roasted tomatoes


Instructions

  1. Sauté aromatics. Heat olive oil in a saucepan over medium heat. Add diced onions and sauté for 5-7 minutes until softened. Stir in minced garlic, tomato paste, salt, pepper, and oregano, ensuring everything is well coated. Cook for another 2-3 minutes to deepen the flavors.
  2. Add peppers & tomatoes. Stir in the roasted red peppers and fire-roasted tomatoes. Increase heat to medium-high until the sauce starts to bubble. Let it bubble for about a minute, then reduce to a simmer over low heat. Cover and let cook for 15 minutes, stirring occasionally.
  3. Blend & serve. Remove from heat and allow to cool for 10 minutes. Transfer to a high-speed blender and blend until smooth. Use immediately or transfer to airtight containers. Store in the fridge for up to a week or freeze for up to three months.

Notes

  1. Blend to desired consistency. Sometimes you might want a chunkier pizza sauce! If so, blend by pulsing the sauce until it reaches your desired consistency.
  2. Storage. If not using immediately, wait for pizza sauce to cool completely before storing in an airtight container of choice. I typically use a glass jar!
