'Tis the season for all things cozy and cinnamon-scented, like this delicious healthy apple crisp - one of my all-time favorite desserts. As much as I adore pie, there is something so satisfying about how easy it is to make a fruit crisp without the fuss of a pie crust, and still get delicious results. If you're trying to create a cozy vibe and a total fall experience to share with family, friends, or just yourself, this healthy apple crisp recipe is an absolute must! And let's be clear about one thing... eating apple crisp for breakfast is encouraged. Let's get to it!

Ingredients

To make this almond butter apple crisp, you'll need:

  • Apples - preferably a tart or sweet-tart variety, such as Granny Smith, Honeycrisp (my fave!), or a combination of the two.
  • Tapioca starch - This helps the apples turn into a saucy apple filling by thickening the maple syrup, lemon juice, and any juices released by the apples while baking.
  • Cinnamon - The cinnamon will be divided between the apple filling mixture and the crisp topping. You could also use an apple pie filling.
  • Butter
  • Oats
  • Spelt flour
  • Almond butter
  • Maple syrup
  • Brown sugar
  • Salt

How to Make Almond Butter Apple Crisp

  1. Step 1: Preheat your oven to 350 degrees and spray a 9x13-inch baking pan with nonstick spray. Thinly slice apples (optional to peel), and place in a bowl with lemon juice, spelt flour, cinnamon, and brown sugar. Toss to coat and transfer to the baking dish.

  1. Step 2: To make the topping, pulse butter, spelt flour, maple syrup, cinnamon, salt, and almond butter in a food processor, just to combine. Add in oats and pulse again, just enough to incorporate.

  1. Step 3: Spread the topping evenly over the apples, and bake at 350 degrees for 45 minutes.

  1. Step 4: Remove from the oven and allow to cool for 10-15 minutes, then serve warm or room temp with vanilla ice cream or whipped cream!

While you have those apple slices out, sauté a few in cinnamon and maple syrup for some Apple Pie Yogurt Parfaits throughout the week.

Description

A twist on classic apple crisp, this almond butter apple crisp is a healthier, real food dessert recipe with plenty of cinnamon, that'll make your house smell amazing. Almond butter, oats, and spelt flour give that topping some extra texture and heartiness.

Filling Ingredients:

  • 5-6 cups Granny Smith or Honeycrisp apples, sliced
  • ¼ cup maple syrup
  • 2 teaspoons cinnamon
  • 2 tablespoons tapioca starch or arrowroot
  • Juice from ½ fresh lemon

Topping Ingredients:

  • 1 cup spelt flour
  • 1 stick butter
  • ¼ cup almond butter
  • ⅓ cup brown sugar
  • 2 tablespoons maple syrup
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup whole rolled oats

Instructions

  1. Prep. Preheat your oven to 350 degrees and butter a 9x13-inch baking dish.
  2. Making filling. Place apple slices in a large bowl and add maple syrup, lemon juice, tapioca or arrowroot starch, and cinnamon. Toss gently to coat the apple slices, then transfer the mixture to the baking dish and spread apples into an even layer.
  3. Make topping. In a food processor, combine butter, spelt flour, almond butter, maple syrup, brown sugar, salt, and cinnamon. Pulse until just combined, then add oats and pulse just enough to incorporate them without breaking them down too much.
  4. Top & bake. Pour the topping over the prepared apples, evenly distributing over the top. Bake at 350 for 45 minutes, then allow to cool for 15 minutes before serving warm with a scoop of vanilla ice cream or whipped cream. Yum!
