- Blackberries - This recipe calls for fresh blackberries, but feel free to use frozen if that's more accessible for you! No need to thaw.

- Lemon - Lemon and blackberry are a flavor match made in heaven! To get the most flavor out of the lemon, we'll be using both zest and juice.
- Milk - Use your favorite kind! Plant-based and dairy milk both work great here.
- Maple syrup - Use honey or agave to sweeten instead, if desired.

How to Make This Baked Oatmeal
- Step 1: Preheat your oven to 350 degrees and place an oven rack in the center. Grease an 8x8 square or 8-inch round baking dish with a bit of butter or coconut oil. Place oats, baking powder, and salt in the baking dish and stir.
- Step 2: In a separate bowl, whisk together the egg, milk, maple syrup, vanilla extract, lemon juice and zest, and melted + cooled coconut oil. Pour directly into the oat mixture in the baking dish, and mix.
- Step 3: Add in blackberries, folding them underneath the oats and smooshing some down.
- Step 4: Sprinkle sliced almonds across the top of the oats, and bake at 350 degrees for 35-40 minutes. When done, the oats will be set (nothing jiggly) and fragrant. Allow to cool for 5-10 minutes, then slice and serve! We love an extra scoop of yogurt, almond butter, or maple syrup drizzled on top.
Pro tip: If you're not feeling like you don't want to dirty up a dish or pot just to melt a tiny bit of coconut oil, you don't need to! Olive oil or avocado oil work great, and you can just pour and mix in right away.

- Blackberry season - Blackberries are typically in season in summer months, so fresh blackberries are best during that time. In the off-season, frozen blackberries (which are frozen at peak freshness) are a great alternative!
- Storing blackberries plastic-free - For long-lasting fresh blackberries, store them in a single layer in the coolest part of your refrigerator. Either a paper bag or a glass container will work. Blackberries go bad quickly when wet, so wait to wash until right before use. Sometimes I line my container with a reusable paper towel to help absorb any moisture!
- Used lemon rinds for cleaning - Before you throw away your juiced and zested lemon, WAIT. Let's get the most out of this lemon that we can! Sprinkle a bit of baking soda onto the fruit of the lemon, then scrub your sink with it. It'll fizz up and do an amazing job cleaning (and smelling fresh)!

Yes, and we LOVE freezing ours! I slice mine into squares and line them with parchment paper in a glass, airtight container (the parchment paper helps keep them from sticking). Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- Scant ½ teaspoon fine salt
- 1 ½ cups milk of choice
- 1 large egg
- ¼ cup pure maple syrup
- 1 tablespoon butter or coconut oil, melted and cooled slightly
- Juice and zest of 1 lemon
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
- ¼ cup sliced almonds
Instructions
- Preheat + prep. Preheat your oven to 350 degrees, and grease an 8x8 square, or 8-inch round baking dish (I usually just use a bit of coconut oil or butter).
- Combine dry ingredients. Add oats, baking powder, and salt directly to baking dish and stir.
- Whisk together wet ingredients. In a medium-large bowl, whisk together milk, egg, maple syrup, melted and cooled butter or coconut oil, lemon juice + zest, and vanilla.
- Combine. Pour mixture into the baking dish with oats, and gently stir to combine. Add blackberries and fold them in, gently mashing some down to ensure they get underneath the oat mixture. Sprinkle sliced almonds across the top.
- Bake. Bake the blackberry baked oatmeal at 350 degrees for 35-40 minutes, or until it's firm with no jiggly spots. Allow to cool for 5-10 minutes before slicing and serving!
Notes
- Storage + freezing. Once oatmeal bake is cool, cut into squares and store in an airtight container in the fridge for up to 5 days. To freeze, place parchment paper between squares (to prevent sticking together) and place in an airtight container in the freezer for up to 3 months. Reheat pieces as needed!
- Meal prep. We have a 30-minute commute to school, so we meal prep an oatmeal bake and freeze it as directed above. Then, we reheat a piece in the morning in the air fryer for our little to enjoy in the car! It's a huge time saver and we feel good knowing he gets a nourishing breakfast before school.
