Blood orange maple pecan yogurt bowls make a delicious and uniquely flavored, lightly sweet breakfast for any day of the week. They're quick and easy to make, hearty and delicious to eat.
Have you ever seen the orange trees in Sevilla, Spain?? They're absolutely lovely, but the oranges themselves are bitter. They get harvested and shipped off to make marmalade. Kind of like how tart apples make the best apple pies, the bitterness of the oranges makes for incredible marmalade.
WHY am I telling you this?? *Sigh* because: 1. I've been MISSING Sevilla so much! I might book a trip there for later this year. 2. You should go to Sevilla. OMG. Everything about it: the history, the beauty, the food, the parks, the celebrations. It's one of my favorite places in the whole wide world. 3. I totally ate one of the bitter oranges in Sevilla. Believe everyone who tells you that they're like, really bitter. 4. I've just been really into citrus lately.
You see, citrus fruits make me very happy because they remind me that not all winter produce is sad. Varieties of oranges (Cara Cara, blood), grapefruits, clementines? They're extra delicious in winter, right when our body is in need of some vitamin C to prevent us from getting sick (not a coincidence!).
PLUS. Who doesn't need a quick and easy breakfast recipe for busy mornings?? One that keeps things delicious and interesting so you don't get bored having the same thing everyday. I know I sure need a few of those kinds of recipes up my sleeve, which is why I'm bringing you a little something quick, easy, and citrus-y with today's recipe: blood orange maple pecan yogurt bowls.
Oh my goodness gracious golly gee whiz, you guys. These yogurt bowls are SO easy, I feel like I'm cheating at cooking. It's as simple as mixing and layering a handful of ingredients in a bowl. That's IT.
Here's how you make 'em...
What You Need.
- Greek yogurt. I love whole milk yogurt or 2%, just because the added fat makes it taste better and also means that it's less processed. There's still a ton of protein and not much sugar, which is the ideal ingredient to fill you up and fuel you through the morning.
- Blood oranges. Honestly, you can use any variety of oranges that you want. I grabbed some blood oranges from the store last week because I'd never tried them before. They're gorgeous, aren't they??
- Pecan pieces. Or whole or halves. I like them to be a bit smaller when I top yogurt because then I get some in every bite.
- Maple syrup. For a little natural sweetness.
- Vanilla extract. For a lil vanilla vanilla action.
- Dried cranberries. Totally optional, but I had some on hand, tried them, and the outcome was deeeelicious.
How to Make Blood Orange Maple Pecan Yogurt Bowls
The Yogurt Base
Okay, so the reason why these blood orange maple pecan yogurt bowls are so delicious, in my opinion, is because the yogurt base basically tastes like an orange creamsicle. I know, right?! ORANGE CREAMSICLES. Hi hello yes please aaand thank you.
All you have to do is whisk together the yogurt with the maple syrup, some vanilla extract, and squeeze some fresh juice from an orange into the bowl. Voila! You have yourself a bit of DIY flavored yogurt, if you will. I actually do this quite a bit with plain Greek yogurt -- whisk in vanilla extract and a little something sweet (maple syrup or honey, typically), to create some flavor in a pinch. I do like the flavor of plain Greek yogurt, though, if it's made with 2% or whole milk. The nonfat kind... I just can't do it. It tastes too sour for me!
Anywho. Yogurt base. Whip it up and let's talk toppings.
The Toppings
Okay. So now that we have our base, it's just a matter of topping it with blood oranges, pecan pieces, dried cranberries, and a little drizzle of more maple syrup if you're interested.
And that's honestly all I have to say about that because it's SO DARN EASY. As always, though, I encourage you to get creative and be resourceful, so I couldn't leave you without a few substitutions and variations.
Substitutions and Variations
- Sub another type of orange for blood oranges. Do you have every ingredients except for blood oranges, but you happen to have regular oranges?? You can totally still make this and it will be amazing and delicious in every way! I used blood oranges because I like gaining exposure to new foods and ingredients I haven't worked with before. In this case, blood oranges were one of those foods 🙂 But please, use any other variety of oranges you have: clementines, mandarins, Cara Cara oranges, etc.
- Sub Greek yogurt for almond or coconut yogurt. If you're lactose intolerant or want something dairy-free, try a plain or vanilla almond or coconut yogurt as your base instead of Greek yogurt.
- Add some granola. Sometimes I like to say it plural 'cause I'm weird like that. Granolas. But no, seriously, if you have some on hand, you should definitely sprinkle a bit on.
- Sprinkle on some chia seeds. I put chia seeds in a lot of breakfast foods, you guys. I sprinkle them on yogurt and smoothies, I cook my oatmeal with them and sometimes toss a handful into pancakes. They add a nice texture and crunch to these blood orange maple pecan bowls, so if you have them on hand, they come highly recommended. By me ;).
So that's that! Keep your breakfasts interesting, flavorful, quick and easy, and high protein and nutrients that you need to fuel you through your day. Make yourself a blood orange maple pecan yogurt bowl.
