I think avocado toast truly counts as one of life's simple pleasures, and it only takes 5 minutes to make! With a thick slice of high quality sourdough, I love it with scrambled eggs or on the side of my favorite roasted cherry tomato soup.
And I know this might be an unpopular opinion, but sometimes I even eat it for dessert (does anyone else have a savory tooth after dinner..??). It's something about the buttery, salted avocado mash contrasted with warm, toasted bread & savory spice that always hits the right notes.

- Sourdough bread - We have some really incredible local bakeries that sell our favorite sourdough bread, but feel free to use what you have access to! If you're at the grocery store, I recommend finding a heartier, seedy whole grain bread.
- Avocado - We're going for peak ripeness here, which means your avocado skin should be dark green. When you gently press your thumb into the avocado, it gives slightly beneath the pressure. I actually always put my avocados in the fridge at this point if I'm not using them right away, because it slows the ripening process and keeps them at their prime ripeness for longer.
Substitutions & Variations
I'm guessing you're hungry, so here a few ideas to get a little more substance on that toast of yours.
- Avocado toast with an egg - So classic and so perfect. Basically what I eat for breakfast every day! Simply top your avocado toast with your egg of choice. It could be a fried egg, hard-boiled (I usually use my Ninja Foodi for boiling eggs), jammy (I even have my favorite jammy egg and avocado toast recipe for you), poached, or even my soft scrambled eggs with fresh chili peppers for a little heat.
- Avocado toast with chickpeas - Add some chickpeas with a drizzle of olive oil, feta, salt, lemon, and fresh herbs of choice (chives, parsley, and cilantro are all delicious, but you honestly can't go wrong here).
- Caprese avocado toast - Top your toast with fresh tomatoes (maybe they're even garlic oven-roasted tomatoes), sliced fresh mozzarella, aged balsamic, fresh basil ribbons, and salt.
Avocado Toast: Step-by-Step Overview

Step 1: Make the mash.
Slice your avocado in half lengthwise and twist the halves in opposite directions to open. Scoop out the avocado from one half (without the pit) onto a cutting board. Mash with a fork, leaving it slightly chunky if desired. Fold the diced tomatoes into the mash right on the cutting board.

Step 2: Toast & spread.
Meanwhile, toast your bread well enough to be slightly browned and crispy all throughout (not burned, not soft). Transfer the avocado mash to your well-toasted bread.

Step 3: Top!
Time to season! Sprinkle with Everything Bagel Seasoning, hemp seeds, and pepitas. Serve immediately as avocado browns when exposed to air.text

Tips for Making Extra Good Avocado Toast
After many years of making avocado toast, here's what I always do to make it extra good.
- Mash the avocado separately from your toast. I love to mash my avocado and any mix-ins right on my bamboo cutting board and then transfer it to the piece of toast. That way, you avoid puncturing your toast or squishing it down too much.
- Pick avocados in their prime. To see if your avocado is perfectly ripe, it should be dark green in color, and avocado should give slightly when you press into it gently with your thumb. To slow ripening or keep perfectly ripe avocados longer, transfer them to your fridge (also true for homemade guacamole).
- Pick good bread and toast it well. The bread is make or break! I usually buy locally made sourdough or breads that are fresh and widely available where I live (shout out and love to Madison Sourdough), but when I get bread from the grocery store, I'll look for something hearty with whole grains. Additionally, you the toast should ideally be sturdy and crunchy, so I like to toast the softness away without burning any part of the bread. Sometimes I'll even toast it on the stovetop with a bit of olive oil!

I personally prefer a thick layer of avocado mash with some chunks left in, because you get the best of both worlds: something to sink your teeth into, but that stays on your toast while you're eating it.
Fun fact, I made my toast on the stove every day living in Spain for six months. Preheat a pan with a touch of olive oil over medium heat. Add your piece of bread and toast it in the olive oil until it's browned on each side, and nicely toasted. Usually 2-3 minutes per side, but check at about 2 minutes in case you want to flip. You could also toast your bread in an oven or air fryer.

Instructions
- Mash avocado. Scoop out the avocado flesh onto a cutting board. Using a fork, mash the avocado to desired consistency - I like some slight chunks, but mostly mashed. Fold the diced tomatoes into the avocado mash directly on the cutting board.
- Toast bread. Place your bread in the toaster and toast until it's browned evenly and nicely crisped, without being too soft or burned.
- Top, season, and serve toast. Transfer the avocado mash to the toast and season with everything bagel seasoning, pepitas, and hemp seeds. If desired, add another pinch of salt (maybe try it first to make sure). Enjoy immediately!
Notes
- Toasting while mashing. You could mash your avocado while your toast is in the toast, but I usually do these steps separately. Mashing avocado first gets it ready to go as soon as the toast is out of the toaster, and then I'm eating a warm piece of toast versus one that potentially had to sit and cool down. It also helps me not forget about my toast and burn it, so if you're prone to burning your toast... this helps avoid it!
- Mash separately. I always mash my avocado separately instead of directly on the toast, as this helps keep the toast in tact.
- Toppings. You can of course go beyond the toppings we have here! Top with eggs, olive oil, feta, chickpeas, chili crunch... all of these would be delicious with this toast.
